HAWAIIAN SPICY EGGPLANT


INGREDIENTS:

  • 1½ pounds eggplant, peeled and cut into 3-inch x 1-inch strips
  • 1 cup shiitake mushrooms, soaked and sliced into strips
  • 1 tablespoon honey
  • 2 tablespoons rice vinegar
  • 1 tablespoon cornstarch
  • 2 red chile peppers, minced
  • 3 slices ginger, minced
  • 2 cloves garlic, minced
  • Non-stick cooking spray


SAUCE DIRECTIONS:

  1. In a bowl - mix honey, rice vinegar, cornstarch, chile peppers, ginger and garlic.

EGGPLANT DIRECTIONS:

  1. Spray non-stick cooking spray into large hot skillet.  Place eggplant and shiitake mushrooms into large hot skillet.  Cook over medium heat until eggplant is golden brown (5 minutes).
  2. Combine eggplant and shiitake mushrooms with sauce (from above) for one minute.

Garnish with cilantro sprigs.  Makes 4 servings.
