HAWAIIAN SPICY EGGPLANT
INGREDIENTS:
- 1½ pounds eggplant, peeled and cut into 3-inch x 1-inch strips
- 1 cup shiitake mushrooms, soaked and sliced into strips
- 1 tablespoon honey
- 2 tablespoons rice vinegar
- 1 tablespoon cornstarch
- 2 red chile peppers, minced
- 3 slices ginger, minced
- 2 cloves garlic, minced
- Non-stick cooking spray
SAUCE DIRECTIONS:
- In a bowl - mix honey, rice vinegar, cornstarch, chile peppers, ginger and garlic.
EGGPLANT DIRECTIONS:
- Spray non-stick cooking spray into large hot skillet. Place eggplant and shiitake mushrooms into large hot skillet. Cook over medium heat until eggplant is golden brown (5 minutes).
- Combine eggplant and shiitake mushrooms with sauce (from above) for one minute.
Garnish with cilantro sprigs. Makes 4 servings.
